Craquelin Choux and Chouquettes

Enjoy wonderful snacks and sip on processo whilst learning the art of choux pastry! 

During this class you will learn how to make craquelin choux buns, filled with Vanilla bean creme legere, how to master a silky chocolate ganache and learn the art of smooth caramel!

The class will be a mixture of demonstration and hands on experience.

Techniques you will learn:

  • Crumble craquelin for choux pastry

  • How to make the perfect choux pastry

  • How to pipe choux and chouquettes

  • Creme Patisserie

  • Dark Chocolate Ganache

  • Fleur de Sel Caramel

  • Creme Legere

  • Techniques on filling, piping and decorating your choux.

Come along to Le Choux Kitchen for a detailed lesson on how to make the perfect choux pastry!

Our hands on class will be taught by pastry chef and founder Abigail Scheuer.  Together, we will make the perfect choux pastry; from which ingredients to use to the perfect baking techniques.  

You will learn how to make the pastry and pipe it, as well as a variety of different fillings and decoration techniques to create the ultimate showstopper dessert! You will then take your pastries home and show off your new hidden talent to your friends and family!

Each participant will be given a recipe booklet with all the recipes to recreate at home. Each participant will obviously take their creations home or eat them here at the kitchen. We don’t judge!

Snacks and refreshments included.

6 People Per Class.

The Class will be broken down as follows:

  • An Introduction to the hows and whys of choux pastry, mistakes to avoid and brief on the class structure, as well as information on the best ingredients to use, what each ingredient plays in the role of the final product.

  • Safe Cooking: The basis to getting started as well as essential health and safety information on working in a commercial kitchen. The right utensils to use and other bits and bobs to be aware of before we get started!

  • Recipe 1: Craquelin Crumble for Choux

  • Recipe 2: Choux Pastry

  • Recipe 3: Creme Patisserie

  • Recipe 4: Chocolate Ganache

  • Recipe 5: Caramel Fleur de Sel Sauce

  • Piping and Filling Choux, (along with a lot of eating!)

When: Saturday 13 April, from 10am - 2.30pm (4.5 hours)

Where: 5, Chippenham Road, W9 2AH

Places are limited (6 people per class.)

Once the class has been booked, we cannot offer a refund. If you can no longer attend the class, please email us straight away at info@lechouxlondon.com we will do our best to help you exchange your ticket, but if we can’t find anyone to take your place, unfortunately we won’t be able to offer an exchange or a refund.

Please wear comfortable clothes and flat shoes. We will provide you with an apron.
